Gingerbread Friends

 It is the week of Christmas Eve and we know Santa will be expecting some cookies. 

These irresistible, vegan and gluten free gingerbread cookies will not disappoint!  With their chewy centers, crisp edges and delightfully spiced flavors, you…(& Santa) are sure to find holiday cheer in every bite! 


Ingredients:

-1 ¾ cup oat flour or Bob's Redmill GF flour blend

-1/4 cup tapioca starch

-1/2 tsp baking soda

-1/2 tsp sea salt

-1 tsp ground ginger (a little extra if you love ginger)

-1 tsp ground cinnamon (a little extra if you love cinnamon)

-1/2 cup coconut sugar

-1/4 cup molasses

-2 Tbsp applesauce

-1/4 cup melted coconut oil

-1/2 tsp vanilla extract

 

For the Icing:

-3/4 cup powdered sugar

-1/2 tsp vanilla extract

-1-2 tbsp non-dairy milk

-you can also opt to buy a vegan icing, such as Miss Jones

 

Directions:

-mix together the flour, tapioca starch, baking soda, salt, spices and coconut sugar in one large bowl

-in a separate bowl, stir together the wet ingredients until well combined.

-add the dry ingredients in with the wet ingredients and fold into one another until a dough starts to form.

-wrap the dough in parchment paper, allow the dough to chill in the refrigerator for about 2-3 hours or overnight.

-Once ready, preheat the oven to 325 degrees and prepare a surface to roll your dough out on by laying down parchment paper and sprinkling excess flour over it. Divide your chilled dough into two halves and warm it up by kneading it with your hands, then place it on the parchment paper with flour and place another sheet of parchment paper over it. Roll the dough out to about ½” thick.

-Use your gingerbread cookie cutter and press into the dough and gently wiggle it around a bit to make sure it cuts all the way through. Once done, pull away any excess dough and roll out to use as much as possible. If your dough gets too soft at any point, simply pop it in the fridge for 20 minutes in the parchment paper.

-Place your gingerbread friends on baking sheets lined with parchment paper and bake for 9-12 minutes, or until they are golden brown. If you like yours extra crispy, allow them to bake for 11-12 minutes. Once done remove from the oven, and allow to cool completely.

-To make your icing simply combine all ingredients in a small bowl and whisk together until smooth. Spoon the icing into a plastic bag and cut one corner so you can pipe the icing on as desired. If you choose to use premade icing, mix the icing up in a bowl to soften it and place in plastic bags or piping bags, cut the corner and get to decorating!!
